Meet our farmers
Liliana Caballero leads Hacienda Casablanca, a family business passed down through generations, with land sustainability at the heart of their tradition.
Before each harvest, the farmers prepare by reviewing and adjusting the coffee pulping machines and dryers, making sure everything is ready to collect the cherries.
Each picker carefully hand-selects only cherries at the right maturity. Choosing the best cherries ensures excellent fermentation, which is vital for the final flavours that develop during roasting.

When the coffee arrives at our roastery, our roaster, Julian Gonzalez, chooses roasting profiles designed to honour our partner's hard work and bring out an amazing specialty coffee, such as Castillo Fermented.
Castillo Fermented is our signature coffee, recommended for white coffee brewing thanks to its double-fermentation process, which brings out notes of caramel, honey, and citrus fruit.
