If you love fruit-forward coffee, this one was made for you. The Castillo Natural celebrates Colombia's most beloved workhorse variety—processed through Natural Anaerobic Fermentation to unlock a vibrant, fruit-driven character that is bold, sweet, and complex.

Sourced directly from Liliana Caballero at Hacienda Casablanca in Colombia's Santander highlands, grown at 1,550 metres above sea level, this is genuine direct trade—transparent, traceable, and built on a deep, ongoing relationship with the producer and the farm. No shortcuts, no middlemen.

In the Natural Anaerobic process, whole cherries are sealed and fermented without oxygen, allowing the fruit's natural sugars to interact deeply with the bean. The result is a cup that bursts with life: strawberry brightness, a tropical fruit's sweetness, and a rich cacao finish that ties it all together beautifully.

Harvested between October and January and in-house roasted in small batches at our Adelaide roastery, this Castillo is roasted on a Medium Omni-Roast profile that lets the fruit shine across every brew method — espresso, filter, plunger, or cold brew.
