Some coffees define a café. This is ours. The Castillo Fermented has been the beating heart of Cafetal Coffee Co. since we opened our doors in 2020 — served every single day to every kind of coffee lover, and it has never let us down.
Sourced directly from Liliana Caballero at Hacienda Casablanca in the Santander highlands of Colombia, grown at 1,550 metres above sea level, this is genuine direct trade — transparent, traceable, and built on a relationship we are proud of: the same farm, the same farmer, the same commitment to quality, year after year.
The Castillo variety is processed through a 2-Phase Fermentation and washed method — a controlled, two-stage fermentation that builds depth and complexity while preserving the bean's natural clarity. The result is a coffee that works for everyone: caramel sweetness, smooth honey, and a clean citrus fruit finish — balanced, approachable, and endlessly satisfying.
Locally roasted in small batches in-house at our Adelaide roastery on a Medium-Dark Roast profile, this is the coffee we reach for every morning. It pulls a beautiful espresso, is exceptional in milk-based drinks, and holds its own as a long black. Reliable, consistent, and genuinely delicious — every single time.
